WEEKEND RECIPE | WHOLESOME AND HEARTY
Words by Melissa Blease
Autumn Traybake with Cider Sauce and Sage and Onion Dumplings
Carrots, celeriac and beetroot are all at their cheapest, brightest best right now – and this recipe celebrates all of them together in one wholesome, hearty dish.
But hang on, I know what you're thinking: a traybake, a sauce and sage and onion dumplings? Don't be put off! None of the elements are anything close to complicated to put together, and this more-or-less one-pot dish can be rustled up in less than hour, start to finish.
This vegetarian recipe can easily be adapted to vegan requirements: simply replace the butter in the sage and onion dumplings with another tablespoon of olive oil and use 3 tablespoons of the liquid from the cannellini bean can in place of the egg to bind the mixture together. If, however, you're feeding 4-6 carnivores, might I suggest that this dish is lovely served with a brace of fat sausages or thick slices of hot boiled ham.
Ingredients (serves 4)
300g carrots, peeled if necessary and cut lengthways (or left whole if skinny) 300g celeriac, peeled and cut into wedges 300g beetroot, cut into wedges 2 large red onions, peeled and cut into wedges 1 x 400g can cannellini beans, drained A few sprigs of fresh thyme or 1 level tbsp dried thyme Olive oil
For the sage and onion dumplings
1 tbsp olive oil 1 tsp butter 1 large onion, peeled and finely chopped 1 heaped tsp dried sage The zest from 1 large lemon 150g fresh breadcrumbs 1 large egg, beaten
Method
- Preheat the oven to 200°C/gas mark 6. Put the prepared carrots, celeriac and beetroot into a large roasting tin. Drizzle with olive oil, season well and roast for 20 minutes (note: the colour from the beetroot may run into the rest of the vegetables; if you'd prefer this not to happen, roast the beetroot separately).
- Tumble the prepared red onions with a little more olive oil, add them to the roasted vegetable medley (along with the partially roasted beetroot if you've cooked it separately). Scatter with the fresh or dried thyme and continue roasting for a further 20 minutes.
- Meanwhile, make the sage and onion dumplings: heat the oil and butter in a frying pan and sauté the onion until translucent. Add the sage and lemon zest, remove from the heat, transfer the mixture to a suitably sized bowl and add the breadcrumbs. Add the beaten egg, season well, stir until thoroughly combined, shape into eight balls and set to one side while you make the sauce... Which really couldn't be easier! Simply whisk all the ingredients together in a large jug.
- Remove the roasted vegetables from the oven. Evenly sprinkle the cannellini beans across the tray, followed by the sauce. Top with the sage and onion dumplings and roast the lot for a further 15–20 minutes until the dumplings are cooked through and turning crispy on top and the sauce has reduced to form a lovely sticky glaze on top of the vegetables. Serve hot.

If there was just one wine…
Godello 'Mara Martin', Terras do Cigarrón – Bodegas Martin Codax
This has to be the one. A Decanter World Wine Awards 2022 Platinum Class.
Fantastically pure and precise, with delicate peach, greengage and pink grapefruit aromas, which are reflected on the superbly refreshing palate. The balance of Mara is impeccable, with the ripe fruit offset by a hint (but not too much) of sophisticated, citrus pith bitterness and tangy (but not sharp) acidity. Very, very fine. Pair with seafood or good cheeses. What’s more it’s just £11.51 a bottle.
Get a box of 12+ for extra discount and there’s a free delivery for orders over £50.

FREE Kinesiology taster sessions, Well Bath, 19 October, 10am–4.30pm
This comprehensive and holistic therapy incorporates traditional eastern and modern western techniques.
The integration of both traditions allows the practitioner to assess and improve health in all areas by treating the root causes of the problems, not just the symptoms. Kinesiology uses muscle testing to detect imbalances in the body that can lead to illness. If someone is mentally upset, chemically out of balance, structurally out of line or their energies are disturbed, the muscle will be unable to fully function. As all aspects of the body are continually communicating with each other, it is impossible to affect one part of the body/mind without the whole also being affected in some way.
Kinesiology restores imbalances in the body using a wonderful variety of therapeutic tools, all of which are non-invasive. It restores imbalances by providing positive input, to bring about a beneficial effect. By restoring balance the body’s natural ability to heal itself is enhanced.
To celebrate kinesiology joining Well Bath, Sharon Fry from English Ivy Wellness will be offering FREE half-hour taster sessions on Wednesday 19 October. As well as experiencing first-hand how kinesiology works, you will have the opportunity to ask any questions and receive a 10% discount off your first full session.
To find out more, give her a call on 07971 288938; to book your slot, visit wellbath.co.uk/treatments.

MAGAZINE KIOSK | WHY WE LOVE PRINT
Curated by Daniel McCabe
Over the last decade HYPEBEAST has been arguably the go-to magazine and digital platform for anything from a simple update to a deep dive into latest stories relating to men’s fashion, art, music, design, tech and lifestyle. Since 2020 the print magazine has been, it says, paused. But this week we're pleased to say that HYPEBEAST roars back with a bumper, landmark 30th issue. With a special edition cover featuring super-hip Japanese designer, DJ and record producer NIGO, The Frontiers Issue explores 'a world far different than it was before, a place of multiple realities that are somehow both intensified and dismantled with every passing moment’. Well, they most certainly got that right. In any case, inside you’ll find Raf Simon, Chance the Rapper, Peter Do, Teezo Touchdown, Oliver Sim, Devon Turnbull, RTFKT and more in this stunning and welcome release.

Gothic Fiction Conference, BRLSI, 22 October
The Gothic novel, with its themes of fear and the supernatural, is having something of a renaissance; with a new film on the subject of Emily Brontë on the cards, and writers such as Neil Gaiman and Stephen King leaning on familiar Gothic tropes, what is it about this genre that we are suddenly seizing upon?
On 22 October, the Bath Royal Literary and Scientific Institution is running a full day of talks about Gothic novels which were either written in Bath or written by authors who at some time in their lives resided in Bath. The talks will examine three female authors: Ann Radcliffe, Mary Shelley and Angela Carter and their works, together with the novel Vathek by William Beckford.
The line-up of speakers includes the outstanding writer and broadcaster Sir Christopher Frayling, the award-winning author Robert Morrison, the highly regarded Bath historian and storyteller Dr Amy Frost, and more.

Saracens v Bath Rugby
StoneX Stadium, Saturday 15 October. K/O 3:00 pm
Bath make four changes to the starting line-up for the trip to Saracens in North London in round 6 of the Gallagher Premiership.
Ruaridh McConnochie will make his first Gallagher Premiership start of the season. The wing comes in as one of four changes to the side that started the West Country derby against Gloucester last time out. Josh Bayliss and Richard de Carpentier return to the back row and Orlando Bailey replaces the injured Piers Francis. His quad injury will keep him sidelined for a month. The front five remains the same for the match in the capital. Tom Dunn continues as captain from hooker with Juan Schoeman and Will Stuart packing down at loosehead and tighthead respectively. Dave Attwood and Quinn Roux combine in the second row while Miles Reid is at openside flanker. The backline has a lot of familiarity from last weekend as Louis Schreuder starts at scrum-half and new signing Ollie Lawrence is named outside Cameron Redpath in the midfield. Wing Joe Cokanasiga and full-back Matt Gallagher complete the XV. On the bench, Academy duo Tom Carr-Smith and George Worboys are in line for their Premiership debuts. The former has taken Max Green’s place in the 23 with the 26-year-old’s ankle injury making him unavailable this week. After arriving from Worcester, Fergus Lee-Warner could earn his first outing in Blue, Black and White.

LOOKING BACK | BATH OR VENICE?
Words by Andrew Swift
James Street West
This week’s archive photograph takes us back 140 years to the floods of October 1882, with a lone figure making his way along James Street West on an improvised punt. The view is totally unrecognisable today, and not just because floods like this are a distant memory. On the right is the Midland Hotel, opened around 15 years earlier, but totally rebuilt in the late 1930s, and now renamed the Bath Brew House. Across the road is Trinity Church, built in 1822 but bombed, like the buildings either side of it, in 1942.

Dress it Forward: looking for donations
Do you have any formal dresses or suits in your wardrobe gathering dust? Dress It Forward is a local charity that collects pre-loved dresses and suits and gives them for free to students in South Africa who would otherwise not have anything to wear to their own graduation ball.
In the townships of South Africa the graduation (or ‘Matric’) ball is a momentous occasion. So few actually graduate that those who do are treated like celebrities and attending the prom is a real sign of achievement. But for many – while they may have made it to the ball – their families are too poor to afford them a dress to wear. So donating free outfits to these students relieves their families of this financial burden.
Please send donations of good quality prom dresses and suits to: Dress It Forward, c/o The Royal High School, Lansdown, Bath, BA1 5SZ, or email for more information: hello@dressitforward.net
