Strawberries 4 Ways
What's better than one strawberry recipe? Four strawberry recipes, of course!
Strawberry Ice Cream (serves 4) In a medium-sized saucepan, lightly simmer 400g hulled, quartered strawberries with 55g caster sugar and the juice of 1 lemon for 15 minutes, stirring frequently. Take off the heat and allow to cool completely. When cool, pour half of the poached strawberries into a bowl and, using a stick bender or a potato masher, mush it into a thick puree. Add the rest of the poached strawberries and stir to combine. In another bowl, whisk 600ml whipping cream with 200ml condensed milk (light or regular, it's up to you) to form soft peaks. Fold the strawberry mixture into the cream then pour into a clingfilm-lined 900g loaf tin and freeze for at least 3-4 hours until solid. Allow the ice cream to soften at room temperature for around 5-10 minutes before serving.
Strawberry Lemonade (makes 1.5l) Dissolve 175g caster sugar in 1l water in a saucepan over a medium heat, stirring continuously until the sugar has dissolved. Remove from the heat and leave to cool completely. Drop 400g hulled, quartered strawberries into a blender or food processor, blitz to a purée and strain through a fine-mesh sieve to remove any seeds. Tip the strawberry purée into a large jug. Add the cooled, sugared water and the juice of around 4-5 lemons (aim for around 200ml lemon juice in total) and stir well to combine. Serve in long glasses, over plenty of ice.
Strawberry Ripple Mousse (serves 4) Blitz 400g hulled, quartered strawberries (reserving a handful for decoration) and 100g caster sugar in a blender or food processor until smooth. Whisk 300ml double cream to stiff peak consistency. Reserve around 4tbsp of the strawberry purée, then ripple the rest through the whipped cream. Divide the reserved purée between four small serving glasses or ramekins, spoon the mousse over the top and chill for at least 1 hour (or up to 8 hours). Serve chilled, topped with the reserved chopped strawberries.
Strawberry Daiquiris (serves 4) Note: you need a powerful blender for this one as the ice needs to be blitzed. Tip 400g hulled, halved strawberries into a blender. Add 150ml white rum, 4 tbsp lime juice and two mugfuls of ice cubes and blend until you reach Slush Puppy consistency. Serve immediately in suitably-sized cocktail glasses.

This has a beautifully intense mandarin orange and lemon sorbet character, with bright, tangy acidity balanced by finely-judged sweetness, resulting in a dry-ish style overall. At only 10% alcohol yet with masses of character, this really is the perfect foil for prawns or langoustines, or Thai, Vietnamese and Malaysian food. It would go equally well with a very British plate of fish and chips.

Coonawarra Estate Chardonnay, Wynns | £14.40
Elegant pear and nectarine fruit flavours are supported by a creamy cashew nut texture. Natural cool climate acidity draws out the palate for a clean and flinty lingering finish with light spice and preserved lemon. Wynns is the largest owner of vineyard land in Coonawarra, with its world-renowned terra rossa soil.

Beurrot Pinot Gris, Kooyong | £27.50
The first impression is an inviting aroma of honeysuckle blossom, followed by toast and honey. When you take a sip, you immediately notice the beautifully round and generous texture with juicy melon and peach fruit character. Then come delicate, creamy oak and complex nuances of flowers and spices. All the flavours are kept fresh, precise and balanced by beautifully crisp acidity so it is rich but never heavy.

If you think William Burroughs or Will Self were the first writers to cover the thorny territory of drug addiction, think again!
Thomas De Quincey is best known for his Confessions of an English Opium-Eater (1821), widely considered the first modern drug memoir. On Friday 31st May, Professor Robert Morrison will be at the Bath Royal Literary and Scientific Institution to deliver a talk entitled The Letters of Thomas de Quincey: Archives, Autobiography, and the Literature of Addiction. Robert Morrison has spent much of the last five years in Bath, where he has been British Academy Global Professor at Bath Spa University. The primary focus of his research during this time has been finding hitherto unknown letters written by Thomas De Quincey and to date he has found almost three hundred.
Don’t miss a talk exploring how, in opposition to his highly romanticised accounts of drug use and abuse in Confessions, De Quincey in his letters tells a sadder, grittier, and far more unnerving story.
