WEEKEND RECIPE | WHOLESOME AND HEARTY

Autumn Traybake with Cider Sauce and Sage and Onion Dumplings
Carrots, celeriac and beetroot are all at their cheapest, brightest best right now – and this recipe celebrates all of them together in one wholesome, hearty dish.
But hang on, I know what you're thinking: a traybake, a sauce and sage and onion dumplings? Don't be put off! None of the elements are anything close to complicated to put together, and this more-or-less one-pot dish can be rustled up in less than hour, start to finish.
This vegetarian recipe can easily be adapted to vegan requirements: simply replace the butter in the sage and onion dumplings with another tablespoon of olive oil and use 3 tablespoons of the liquid from the cannellini bean can in place of the egg to bind the mixture together. If, however, you're feeding 4-6 carnivores, might I suggest that this dish is lovely served with a brace of fat sausages or thick slices of hot boiled ham.

Ingredients (serves 4)
- 300g carrots, peeled if necessary and cut lengthways (or left whole if skinny)
- 300g celeriac, peeled and cut into wedges
- 300g beetroot, cut into wedges
- 2 large red onions, peeled and cut into wedges
- 1 x 400g can cannellini beans, drained
- A few sprigs of fresh thyme or 1 level tbsp dried thyme
- Olive oil

For the sage and onion dumplings
- 1 tbsp olive oil
- 1 tsp butter
- 1 large onion, peeled and finely chopped
- 1 heaped tsp dried sage
- The zest from 1 large lemon
- 150g fresh breadcrumbs
- 1 large egg, beaten
|

For the sauce
- 150ml dry cider
- 1 tsp Dijon mustard
- 1 tsp apple sauce, fruity chutney or redcurrant jelly
- 1 tsp yeast extract (aka Marmite)
- 150ml hot vegetable stock
|
|
|
|
Method
- Preheat the oven to 200°C/gas mark 6. Put the prepared carrots, celeriac and beetroot into a large roasting tin. Drizzle with olive oil, season well and roast for 20 minutes (note: the colour from the beetroot may run into the rest of the vegetables; if you'd prefer this not to happen, roast the beetroot separately).
- Tumble the prepared red onions with a little more olive oil, add them to the roasted vegetable medley (along with the partially-roasted beetroot if you've cooked it separately). Scatter with the fresh or dried thyme and continue roasting for a further 20 minutes.
- Meanwhile, make the sage and onion dumplings: heat the oil and butter in a frying pan and sauté the onion until translucent. Add the sage and lemon zest, remove from the heat, transfer the mixture to a suitably-sized bowl and add the breadcrumbs. Add the beaten egg, season well, stir until thoroughly combined, shape into eight balls and set to one side while you make the sauce.... Which really couldn't be easier! Simply whisk all the ingredients together in a large jug.
- Remove the roasted vegetables from the oven. Evenly sprinkle the cannellini beans across the tray, followed by the sauce. Top with the sage and onion dumplings and roast the lot for a further 15–20 minutes until the dumplings are cooked through and turning crispy on top and the sauce has reduced to form a lovely sticky glaze on top of the vegetables. Serve hot.
