The Fashion Museum Bath has today announced that seven ensembles have been chosen by award-winning fashion journalist and educator Iain R Webb for the prestigious annual accolade, Dress of the Year. It includes Naomi Campbell’s hazmat suit which made worldwide headlines when she wore it on a flight to New York in March 2020.
Each year, the Fashion Museum invites a top name from the fashion industry to select an outfit that encapsulates the prevailing mood of fashion, represents the past year and captures the imagination.

Creamy seafood pancakes |
|
|
|
Elegant, luxurious but super-simple to rustle up, this classic dish on a Crepe Mornay theme offers a fuss-free route to festive fabulosity: although there are several stages involved in the preparation, none of the stages are complicated and they can be done ahead of time.
This recipe allows for two pancakes per person as a main course for four but the quantities can easily be halved to serve two, while one seafood pancake per person makes a perfect starter or light lunch. But if you're making pancakes, you might as well make a stack and freeze the surplus between sheets of greaseproof paper in a tightly-sealed freezer bag.
On the seafood/fish front: any combination of 'meaty' fish such as salmon, monkfish, cod loin or even smoked cod fillets work well, but don't overlook the prawns – they add intrinsic texture and succulence. If you really want to push the boat out, crab and lobster both seriously up the glamour ante... and, for a vegetarian version, simply replace the seafood with chestnut button mushrooms sautéed in garlic butter and stirred into the white sauce combined with wilted spinach and a dash of freshly grated nutmeg.
Ingredients (serves 4)
For 8 pancakes: 125g plain flour 1 medium egg 300ml milk
For the seafood filling:
25g plain flour 25g butter 300ml whole or semi-skimmed milk 150ml crème fraiche 300g skinned, cubed, firm fish fillets 200g large peeled prawns (defrosted if frozen) 50g Gruyère cheese, grated ½ bunch fresh dill, finely chopped ½ bunch fresh parsley, finely chopped Salt and white pepper, to season
Method
For the pancakes:
- Whisk the milk, egg and flour together until you have created a smooth, creamy batter. Allow the batter to rest for a minimum of 30 minutes. Heat a small amount of butter in a frying pan. As soon as the butter begins to smoke, pour approximately 3 tbsp batter into the pan and cook until golden brown on the underside before flipping over and repeating. Stack the finished pancakes on a plate separated by layers of greaseproof paper. (NB. The pancakes can be kept for up to 24 hours in the fridge)
For the seafood sauce:
- Preheat the oven to 180ºC/gas mark 4. Heat the flour, milk and butter together in a large saucepan over a medium heat, whisking continuously until you have created a thick, smooth white sauce. Add the crème fraiche and the cheese (reserving a small amount of cheese for baking) and stir well to combine. Put 6–8 tbsp of the sauce to one side. Add the fish and prawns to the pan and cook over a low heat for five minutes, stirring occasionally. Remove from the heat and add the herbs, white pepper and salt, stirring gently to combine.
- Grease a large, shallow ovenproof dish and smooth 2–3 tbsp of the reserved white sauce across the base. Divide the seafood filling evenly down the centre of each pancake, tuck the outside edge in a bit and carefully roll to form a neat tube. Place the pancakes seam-side down on the sauce in the ovenproof dish, cover with the remaining sauce and sprinkle with the reserved cheese (NB. the dish can be refrigerated for up to 8 hours from this point before baking.)
- Bake for 20–30 minutes until the top is golden and the cheese is bubbling. Allow the dish to settle for 5 minutes before serving with green vegetables (asparagus and/or green beans work well here) or a well-dressed salad.

FOODIE DELIGHTS | TAKE FOUR
|
|

Smoked Salmon Pâté (4 servings)
Blend 100g smoked salmon, 100g cream cheese, 100g crème fraiche (or double/soured cream), 2-3 tbsp horseradish sauce and a squeeze of fresh lemon juice together in a food processor until smooth. Scrape the mixture into a bowl and stir in another 50g roughly chopped smoked salmon, 1 tbsp capers and 1 tbsp freshly chopped dill. Divide the pâté between 4 ramekins and chill for at least 2 hours before serving with toast or crackers. The pâté can be kept in the fridge for up to 2 days.

Smoked Salmon Palmiers (makes approx. 30)
Heat the oven to 180ºC/gas mark 6. Unroll one 320g sheet of ready made puff pastry and spread 5–6 tbsp cream cheese across the whole sheet. Top the cream cheese with approx. 120g shredded smoked salmon and, with a longer edge of the pastry facing towards you, roll in towards the centre. Repeat with the other side. Using a very sharp knife, cut the roll into approx. 30 slices. Place the slices on a baking sheet lined with greaseproof paper and bake for 20–25 minutes until golden. The prepared palmiers can be kept on the baking tray in the fridge for up to 24 hours before baking, or frozen for up to 2 months (allow an extra 5 minutes oven time if baking from frozen).

Silky Smoked Salmon and Spinach Pasta (serves 2)
Cook 200g tagliatelle according to the instructions on the packet. Meanwhile, gently sauté 2 crushed garlic cloves in olive oil until translucent (1–2 minutes) before adding 100g baby spinach leaves and stirring until the spinach has wilted. Add 150g crème fraiche, 150g shredded smoked salmon and the juice of half a lemon to the pan and stir well. Drain the cooked pasta (reserving a couple of tablespoons of cooking water) and add to the pan, loosening the mixture with the reserved pasta cooking water as you stir all the ingredients together. Serve topped with plenty of black pepper.

Smoked Salmon and Avocado Terrines (makes 4 terrines) |
|
Line 4 ramekins with cling film and a layer of smoked salmon slices, leaving a bit of overhang of both. Mix the flesh of 2 large, ripe avocados with 50g mild goat's cheese, 3 tbsp lemon juice and a handful of finely chopped chives and spoon the mixture into the salmon-lined ramekins. Fold the overlapping salmon over the top of the mixture followed by the excess cling film, to seal. Refrigerate for at least 4 hours before carefully lifting the terrines from the ramekins with the cling film. Remove the cling film and turn the terrines out on to individual plates. Serve with thin toast, well-dressed salad leaves and a pool of sweet chilli sauce (optional). The terrines can be kept in the fridge for up to 24 hours.

Two new concerts for Bath Philharmonia |

Bath Philharmonia will be performing two new concerts in the New Year at The Forum featuring three of the UK’s most exciting soloists. Classical superstar guitarist, Miloš Karadaglić performs Rodrigo’s Concierto de Aranjuez, a glorious evocation of Spanish life, in a concert full of warmth and Iberian fire on 21 January. Then, on 12 February, ‘electrifying’ and ‘one in a million’ pianist, Benjamin Grosvenor, joins Bath Philharmonia to perform Chopin’s 2nd Piano Concerto in a double billed-concert full of romance, infatuation and passion and captivating cellist Laura van der Heijden performs Schumann’s emotionally charged Cello Concerto.

The Age UK B&NES Christmas Singing Bus will be taking a slow route from the centre of Bath from 3pm on 20 December through parts of Bear Flat, Odd Down, Englishcombe Lane, Southdown, Whiteway, Twerton, Oldfield Park and Lower Bristol Road. There will be a few stops on the way.

This January, Dorothy House Hospice Care is running its biggest annual Christmas Tree Collection fundraiser in partnership with the Justhelping charity.
Local people can book their used Christmas tree in now for a charitable donation and Dorothy House supporters and volunteers will pick it up between 8–10th January 2021. The collection is running in 14 local postcodes.
In 2021 the charity is offering Christmas tree collections in BA1, BA2, BA3, BA4, BA11, BA12, BA13, BA14, BA15, SN12, SN13, SN14, SN15 and new to 2021, BS31. Dorothy House offers a limited capacity collection which relies on volunteers and local businesses so get in touch if you can help by providing a van and volunteers.
