WEEKEND RECIPE | HOORAH FOR NIÇOISE
Recipe by Melissa Blease
4 Salads
Salade Niçoise (serves 4) |
Boil 500g halved, unpeeled new potatoes for 12-15 minutes (or until tender), adding around 300g trimmed green beans (chopped into bite-sized slices) for the last 3-4 minutes of cooking time. Drain and set to one side. Hard boil 4 large eggs for around 6 minutes (for a slightly soft-set yolk) and plunge into cold water before peeling, to avoid the dreaded 'green rim'. Whisk 6-7 tbsp extra virgin olive oil with 3 tbsp red wine vinegar, 2 garlic cloves (crushed), 2 tbsp finely-snipped chives and plenty of seasoning. Tumble 10-12 cherry tomatoes (halved), 10-12 pitted black olives and 2 stripped, torn baby gem lettuces into a large salad bowl. Add the room-temperature potatoes and beans along with the salad dressing and mix gently to combine (clean hands are the best utensils here!). Top the salad with the hard boiled eggs, the contents of 2 x 200g high-quality tinned tuna in olive oil (drained) and 6-8 anchovy fillets. Serve immediately.
Waldorf Salad (serves 4) |
Toast 50g shelled, roughly-chopped walnuts in a dry frying pan until fragrant and set aside to cool. Put 50g sultanas into a small bowl and add enough boiling water to just cover; set aside. Peel and core 2 sharp green apples and chop into matchsticks. Put the apple matchsticks into a large bowl and tumble with the juice of ½ a lemon. Destring and finely-slice 2 sticks of celery and add to the apples. Mix 100g mayonnaise with 2 tbsp natural yoghurt (or crème fraîche) and 1 generous tsp Dijon mustard and season to taste. Drain the sultanas and add to the apple and celery followed by most of the toasted walnuts (keep some back for garnishing) and the dressing. Stir well to combine. Strip the leaves from 2 Little Gem lettuces and divide them across 4 serving plates. Top each lettuce-lined plate with equal amounts of the salad mixture and top with the reserved toasted walnuts and a drizzle of walnut oil. Serve immediately.
Caprese Salad (serves 4) |
Chop around 600g ripe tomatoes into quarters or bite-sized chunks depending on size (use really, really good, flavoursome, room-temperature tomatoes for this recipe, as they're the co-stars of the show). Put the tomatoes into a bowl, sprinkle liberally with salt and set to one side for 10 minutes before adding 1-2 tbsp extra virgin olive oil and gently tossing with a couple of spoons. Arrange the tomatoes on a big flat platter and spoon the juices from the bottom of their bowl over the top. Tear 250g room-temperature buffalo mozzarella into chunks and dot hither and thither over the tomatoes. Drizzle with a little more extra virgin olive oil, a sprinkling of salt and a liberal scattering of torn basil leaves. Serve immediately.
Caesar Salad (serves 4) |
Remove the crusts from 2 slices of day-old white bread and cut into croûton-sized cubes. Heat around 3 tbsp olive oil in a non-stick frying pan, add the bread cubes and fry over a high heat for 3-4 minutes until golden-brown. Transfer the croûtons to a bowl, season with salt and pepper while still warm and set to one side. Combine 6 tbsp mayonnaise, 1-2 tbsp Dijon mustard, 2-3 tbsp finely-grated parmesan, 1 clove garlic (peeled and crushed), a few drops of Worcestershire Sauce and 1 tbsp tepid water and gently beat until smooth. Tear the leaves from 1 sliced Romaine lettuce heart into a large serving bowl along with 12 cherry tomatoes (halved). Add the dressing and toss gently until the lettuce leaves and the tomatoes are thoroughly coated in the dressing. Scatter with the toasted croûtons, plenty of finely-grated Parmesan and a generous sprinkling of black pepper. Serve immediately.

Curated by Daniel McCabe
Viscose is a Copenhagen-based journal for fashion news and criticism published roughly once a year in – for some reason – novelty packaging. The first issue came in a handbag, the second as something that looked like shrink-wrapped underwear (both sold out) and the latest has arrived inside a Chinese fan. The fan itself is a nod to the issue’s focus on the fashion scene in Asia (it’s called the ASIAS issue, published in partnership with X Museum in Beijing) and, gimmicks aside, this is must-have for anyone interested in contemporary fashion from an interesting think-tank in the field. £20

Talk: 'Joana Vasconcelos: The enduring legacy of embroidery in contemporary art', 20 June (7pm), Zoom
Visual artist Joana Vasconcelos is renowned for her monumental sculptures, drawing, film and textiles.
She updates the arts and crafts concept to the 21st century and incorporates everyday objects with irony and humour, creating a bridge between domestic environment and public space while questioning the status of women, consumerist society and collective identity. Inspired by The Holburne Museum's display of seventeenth century embroidery, Joana will discuss that, in spite of the notion of needlework as a domestic pastime rather than artistic endeavour, it has an enduring legacy in contemporary art.
Joana will speak as part of The Holburne Museum's summer programme; the event takes place on 20 June (7-8pm) on Zoom, and is free to attend. Find out more on The Holburne's website: holburne.org

BRLSI – British Political Cartoons 1805-2022: A Brief History, 20 June
From Gillray’s Plumb Pudding to Dave Brown’s subversive depictions of the war in Iraq, throughout history cartoons have helped us consider our world in a different and more subversive light.
Next week, Britain’s leading authority on political cartoons will outline their evolution and history, using examples of some of the greatest cartoons to appear in print. This special live event, being hosted on Monday 20 June by the Bath Royal Literary and Scientific Institution, sees Dr Tim Benson of the Political Cartoon Gallery, London outline the history and evolution of political cartoons.
Dr Benson will discuss the evolving relationship between cartoonists and their editors and will consider recent developments, in the light of the case of Charlie Hebdo and the 'Je suis Charlie' movement and address whether cartoonists can continue to assert the right to offend while holding those who govern us to account.
This talk will take place in-person at BRLSI, 16 Queen Square, Bath, BA1 2HN, on Monday 20 June, from 7.30pm-9pm. Members £4, non-members £7. Click here to buy your tickets.

As our thoughts turn to summer holidays, this week’s archive photograph recalls the time when express trains linked Bath with Bournemouth.
A century ago, three trains a day ran from the north of England to Bournemouth via Bath, and in 1927 one of them, which started in Manchester, became the legendary Pines Express. By 1952, more people than ever before were taking annual holidays, but, as very few of them had cars, they travelled by train. On a typical high summer Saturday 70 years ago, the Somerset & Dorset line from Bath to Bournemouth was worked to its full capacity. No less than ten expresses from the Midlands and the North to the South Coast travelled through Green Park station, and eight local trains had to be fitted in as well. It was more or less the same in the opposite direction. An added complication was that most expresses had to have an extra engine attached to get them up the one in 50 gradient out of Bath. Once they got to the top of the bank, the extra engine was detached and headed back to be ready to assist the next express. The problem with all this frenetic activity was that it was concentrated into only around 10 or 12 days a year. The rest of the time, things were much quieter, and by 1962, when the Pines Express was rerouted via Oxford, it was clear that the Somerset & Dorset was being downgraded in preparation for closure, which came four year later.
This photograph, taken in the 1930s, shows a Bournemouth express heading south over Tucking Mill Viaduct, a spot that will today be familiar to many as one of the most scenic stretches of the Two Tunnels Greenway.
