WEEKEND RECIPE   STRICTLY SAUSAGES

Sausage Casserole

Made with juicy pork sausages, smoky chorizo, earthy beans and all manner of enticing tastebud-tantalising seasoning, this hearty sausage casserole is brings warmth and cheer on a chilly autumn day.

Ingredients (serves 4-6, can easily be halved to serve 2-3)

6 good quality pork sausages
6 cooking chorizo (about 400g), sliced or cut into chunks
2 onions, chopped
1 red pepper, chopped
1 green pepper, chopped
3 garlic cloves, crushed or grated
2 tsp smoked paprika
1 tbsp dried thyme
2 x 400g cans white beans (eg, cannellini or butter beans)
2 x 400g cans chopped tomatoes
350ml chicken or vegetable stock
125ml red wine (optional, but highly recommended)
Splash of Worcestershire Sauce
Oil for frying

Method

  1. Heat around 2 tbsp oil in a large, heavy based pan. Add the chopped onions and soften for around 5 minutes before adding the peppers and continuing to sauté for a further 5 minutes.
  2. Meanwhile, fry the chorizo until caramelised around the edges – you won't need to use much oil as the chorizo will release its own as it fries. Remove with a slotted spoon and set to one side before browning the pork sausages in the oil released by the chorizo.
  3. Add the garlic, smoked paprika and dried thyme to the onion/peppers mix and sauté for around 2 minutes. Add the wine (if using) and allow to bubble down for a couple of minutes before adding the tomatoes, stock and Worcestershire Sauce. Bring to a simmer and add the sausages and the chorizo, plus the infused oil from the browning pan.
  4. Simmer on a medium heat for around 30 minutes before adding the beans to the pan and continuing to simmer for a further 10 minutes.
  5. Serve with chunks of fresh, crusty bread to soak up all the sauce or piles of buttery mashed potato and plenty of greens.

RESTAURANT REVIEW  WEEKEND TREAT

Established on Upper Borough Walls over 20 years ago, Raphael has shrewdly clad the iron fist of change in a lovely vintage velvet glove; it’s not trying to be cutting edge, it isn’t flash, it’s just… lovely. 

From the moment you step through the door into this gorgeous little classic bistro, some kind of magic starts to happen. Soft music and candle light, supremely welcoming staff who cleverly make you feel like a million dollars even if your budget's firmly fixed on the Prix Fixe, and Parisian bistro styling including plush banquettes all result in a warm fug of subtly glamorous bonhomie.

Menus largely revolve around imaginative versions of Modern British classics; you might find lamb rump with faggots and cabbage at the start of the main course range, giving way to a high-class burger by way of crispy duck egg with pan fried gnocchi, goat's curd and poached plum, but every dish is anchored by a very clear mission statement guaranteeing that locally sourced, seasonal, sustainable ingredients are pushed to the fore at every turn. Meanwhile, puddings are always perfect, the wine list is wonderful, and Sunday roasts are outstanding.

ONE GIN  REFRESHINGLY FRUITY

One Gin Gobbler

Tis the season for apples and with this week marking Apple Day, ethical gin brand One Gin is celebrating, sharing unique apple inspired cocktails and baking recipes. Here's a cocktail to try this weekend, a refreshingly fruity long drink that’s sure to lead to repeat orders. You'll need a highball glass.

Ingredients

30ml One Sage Gin
1/4 fresh apple, cubed
4 sprigs lemon thyme, plus more to garnish
30ml white port
15ml elderflower cordial
20ml lemon juice
10ml Earl Grey tea syrup
2 orange slices
2 lemon slices
80ml ginger ale

Method

In a cocktail shaker, crush up the apple with 4 sprigs of the lemon thyme (regular thyme will do if you can’t find lemon). Add the remaining ingredients, except the ginger ale, shake well with fresh ice and top with ginger ale. Garnish with thyme sprigs.

Harbour cove designed by Grant Associates opens in Barangaroo, Sydney

A new harbour cove and boardwalk designed by Bath-based landscape architect Grant Associates has opened to the public in Barangaroo in Sydney’s new business district. Watermans Cove features a crescent-shaped cantilevered waterfront walkway to allow people to get close to the water, creating an entirely new public space on the city’s foreshore.

The fully accessible, amphitheatre-style boardwalk extends out to create a new public pier. Huge sandstone blocks provide informal seating areas and native species trees create a shady backdrop to the open waterfront. A feature fig tree has been planted on part of the original dockside structure.

Stories of the Sahara by Sanmao

The cover drew me in initially: the enigmatic image shows a woman dressed in black with kohl-lined eyes standing in a desert city. The figure is Sanmao, Taiwanese explorer who moved to the Western Sahara territory in the 1970s. Hugely popular in China, here her tales have been translated into English for the first time - and, featuring everything from quicksand to cursed necklaces, they are scenes straight from an adventure book. 

Remarkable are the snapshots of life in this fascinating place, rendered all the more tender and vivid in their domesticity, and dissonant with the violence that threatens to break through in moments. Sanmao lacks any arrogance which can sometimes pervade travel writing, otherness dispelled by compassion and warmth as she forges friendships with the local Sahwari people. Above all she is an inimitable companion - a presence so warm, charismatic, infuriating and funny that it is impossible not to fall in love with her and her indomitable lust for life.

The First Woman by Jennifer Nansubuga Makumbi

Kirabo enjoys a happy existence in the rural Ugandan village of Nattetta; though she can’t shake a longing to find the mother she has never known. Her life becomes complicated, however, by the newly discovered presence of a second, uncontrollable self inside of her, one which flies out in rebellious moments. She seeks the advice of a local witch, Nsuuta, who tells her that she is lucky, for this second self is the nature of ‘the first woman’, which most women no longer possess. 

A coming of age story from an author who perfectly balances beauty and subtlety in her prose, The First Woman is a magnificent blend of epic and personal. Ugandan myth and history provide a rich and fascinating backdrop to a story of universal humanity.

CHOIRSHOW 2

On 1 November look out for the release of CHOIRSHOW 2 – a brilliant live broadcast of virtual choir videos recorded by 14 different choirs from across the UK, in support of Keynsham charity The Music Man Project.

The Fast and the Foodies

Part of plans to foster a vibrant new quarter at Innox Mills brand new car exhibition, complete with street food – is coming to Trowbridge on 14 November.

The event will feature super cars, sports and classic cars, plus a variety of street food stalls. From some of the newest Lamborghinis, Porches and Ferraris to classic British and American cars such as the Capri, Mustang, an American Hot Rod and a 1933 Austin, there will be all kinds of models on display.

Running from 10am–2pm next to Trowbridge Station car park, social distancing measures will be in place to protect both visitors and stallholders.

Museum of East Asian Art

Museum of East Asian Art has moved its popular East Asian Monsters storytelling and Mask Masking online! A great way to get crafty and have fun in the cosy environment of your own home. The session will be led on Zoom by musician and teacher James Brookmyre on 31 October from 11am to 3pm.

A free digital pack will be sent out before the event to all those who have booked – this will include a list of material you will need for the workshop, a mask template and other materials for the event.
