Crab and Sweetcorn Soup with Brioche Croutons |
|
|
|
Fresh crab is abundant at this time of the year. But unless you happen to be reading this while holidaying on the South West coast (or you happen to have a fantastic fishmonger in your neighbourhood), it isn't as readily available to urbanites as it should be. Fortunately, however, picked, fresh, sustainable Cornish crab is indeed readily available in little pots in the fish or delicatessen section of most large supermarkets – and yes! Somebody else has already done the tricky job of cooking and picking it for you.
Crab is massively tasty and exceedingly versatile... and a little goes a long, long way in bisques, pasta dishes, salads and, of course, classic crab sandwiches. But this elegant soup allows the intrinsically salty/sweet, slightly nutty flavour of both white and brown crab meat (the white meat being light and creamy; the brown slightly richer) to enjoy centre stage spotlight, turning the dish into the prandial version, if you like, of an oceanic breeze wafting in on a softly sweet, creamy tide while the delicate brioche croutons add further texture and bite.
This recipe makes two portions of soup, suitable for a light lunch. But if you want to turn it into a more substantial, British seaside-themed supper, few people would complain if you were to plonk a plateful of hot, fresh, salted, vinegary fries on the table too...

Ingredients (serves 2) |
|
For the brioche croutons: 2 x slices thickly-cut brioche, crusts cut off and chopped into bite-sized cubes
For the soup: 1 shallot, peeled and finely sliced ½ tsp mild (or korma) curry powder 340g sweetcorn (tinned or frozen is fine) 75ml dry white wine 100ml double cream 1 level tbsp finely-chopped fresh dill (or chives) 100g picked white and brown crab meat
To serve: Around 60ml soured cream; hot fries (optional!)

Method |
|
1. Heat a large frying pan until just above medium hot and tumble the brioche cubes straight into it (you won't need any butter or oil). Dry sauté the cubes for around 3-5 minutes until they've magically turned into golden croutons and set to one side.
2. Melt around 1 tbsp butter in the hot pan and sauté the peeled, finely-sliced shallot with the curry powder for around 2-3 minutes, or until the shallot has just softened and the curry powder is fragrant.
3. Add the sweetcorn (and all the liquid from the can, if you’re using canned sweetcorn) and the white wine to the pan along with enough water to just about cover. Bring to a simmer, add the double cream, stir well, pour the soup into a blender or food processor and blitz to smooth puree.
4. Return the soup to the pan, add the fresh dill (or chives) and gently heat through without allowing to boil. Serve immediately in warm, shallow bowls topped with the fresh crab, the brioche croutons, generous drizzles of soured cream... and those 'optional' fries.

It’s Mille Miglia week!
Originally started in 1927 by an Italian Count and a group of car enthusiasts in the town of Brescia, the Mille Miglia (15-18 June) is a 1,000 mile, open-road rally circuit in Northern Italy; apart from WWII, the race took place every year until 1957.
The Mille Miglia was always fiercely contended and Sterling Moss scored a famous victory in 1955 with a record time of just over 10 hours in his Mercedes. The race was also gruelling and notoriously perilous – and due to increasing accidents and fatalities (drivers and spectators) it was pulled in 1957.
The race was revived in 1977: this time more of a grand tour for well-heeled gentlemen and a 1000 mile parade of classic and vintage cars – although to this day some of the playboy drivers still like the rush of competitive adrenalin.
Luxury brand Chopard has long been associated with the Mille Miglia as principal sponsor; every year it creates a new limited-edition timepiece to celebrate the event, and all drivers are presented one as a trophy for their endurance.

St Nick's pop-up museum: now open
The Market Story Shop has opened in St Nick’s Covered Market.
The new museum showcases some of the market’s rich history. From its early beginnings to the present mix of gifts, fashion and food, the Story Shop museum includes memories of the flower market, the fruit market and music nights at The Exchange.
Established in 1743, St Nick’s is now home to the largest collection of independent retailers in Bristol. The historic indoor and outdoor markets house over 60 stalls, selling a range of unique gifts, quality crafts, clothing and fashion, accessories, books, records and food.
To help build on the collection, working in collaboration with visitors, the museum is inviting people to come along and share their own experiences and memories of the market to add to the display.
The museum will be located opposite Treasure Island Sweets within the Covered Market, and open Mondays, Wednesdays and Fridays, from 11am to 4pm.

Rugby legends clip in for Gallagher’s 750-mile cross country cycle challenge
From 11 to 18 June, a core team of former professional rugby players – including ex England and Scotland internationals Jack Clifford and Nathan Hines, and supported by Ugo Monye – will cycle for seven days from Newcastle to Twickenham.
The ‘Road to Twickenham’ cycle challenge aims to raise a minimum of £30,000 for Wooden Spoon and local Gallagher Premiership Rugby Foundations, with an incredible 650 cyclists taking part overall. The challenge will cover 750 miles, stopping off at Premiership Rugby grounds, before delivering the Gallagher Premiership trophy to Twickenham Stadium on the day of the 2022 Gallagher Premiership Final.
The team will be cycling through Bristol and on to Exeter (124.3 miles) on 15 June.
