WEEKEND RECIPE | SIMPLY DELICIOUS

4 Speedy Store-cupboard Suppers
(all recipes serve 4)

Spaghetti Puttanesca (v)
In a large frying pan over a medium heat, sauté 1 large, peeled, chopped onion in a little olive oil until translucent, adding 2 cloves of garlic (peeled and crushed) and ½ tsp chilli flakes for the last minute of cooking time. Add 1 x 400g tin of chopped tomatoes to the pan along with 6 finely-chopped anchovy fillets, 2 tbsp capers, 1 tsp sugar, a splash of red wine or sherry vinegar and a generous handful of pitted black olives. Season well and simmer uncovered for around 15 minutes. Meanwhile, cook 300g dried spaghetti according to the instructions on the packet. Add the cooked, drained spaghetti to the sauce along with around 1-2 tbsp pasta cooking water, tumble together and serve immediately, sprinkled with chopped fresh parsley if you have any to hand (note: best not tell the kids what the word 'puttanesca' translates to in English...)

Prawn Pad Thai
Cook 250g rice noodles according to the instructions on the packet, adding 150g frozen peas and 200g frozen raw prawns for the last minute of cooking time. Drain and set to one side. Heat a splash of vegetable oil in a large frying pan and sauté 1 deseeded, chopped red or green pepper and a small bunch of spring onions (peeled and chopped) for around 2 minutes. Add 100g beansprouts and the noodle/pea/prawn mixture to the pan and continue to sauté the whole lot together for 2 minutes or until the prawns have turned pink. Push the mixture to one side of the pan and add 2 large beaten eggs. When the eggs have formed a runny omelette-type affair, mix all the ingredients together again, along with 2 tbsp dark soy sauce, 2 tbsp sweet chilli sauce and around 3 tbsp crushed, roasted peanuts. Serve immediately, spritzed with fresh lime juice and scattered with fresh coriander if you have either/both to hand.

Hearty Bean and Creamy Coconut Broth (vegan)
In a large frying pan over a medium heat, sauté 1 small bunch of spring onions (peeled and sliced) with 1 deseeded, chopped red pepper, 1 small red chilli (finely sliced) and 2 cloves of garlic (peeled and crushed) for around 5 minutes or until soft and fragrant, adding 1 tsp medium curry powder for the last minute or so. Add 1 x 400g tin chopped tomatoes to the pan followed by 3 x 400g cans of beans of your choice (a mixture of kidney, cannellini and/or black beans all work well here). Add 1 crumbled vegetable stock cube (or one of those dinky little vegetable stock pots) to the pan along with 2 x 400g cans coconut milk. Stir until thoroughly combined, bring to the boil and simmer for 10 minutes before serving in warm bowls, spritzed with fresh lime juice if you have any to hand.

Sweet Potato and Lentil Curry (vegan)
In a large frying pan over a medium heat, sauté 2 large red onions (peeled and chopped) in a glug of olive oil until translucent, adding 2 level tbsp medium curry powder and 2 level tsp dried cumin for the last couple of minutes. Add 200g rinsed red lentils to the pan along with 3-4 medium-sized sweet potatoes (peeled and cut into chunks), 2 x 400g cans of chopped tomatoes, 2 x 400g cans of chickpeas (drained) and 1l vegetable stock. Stir well, bring to the boil, and cover and simmer, stirring occasionally, for around 20 minutes, or until both the lentils and the sweet potatoes are tender. Serve immediately on piles of steamed rice, perhaps topped with a dollop of thick yoghurt and a sprinkle of fresh coriander, and accompanied by naan breads or roti (if you happen to have any in the freezer).

Created by the restaurant’s talented bar team, two mouth-watering cocktails will be available for guests to enjoy. The Devil’s Mule, (£10.75) a diabolical blend of Monkey 47 Gin, Wyborowa Vodka, Lillet Rouge, chilli, cinnamon, lemon, and ginger beer, and the Muertas Margarita, (£10.50) a drink for the Day of The Dead, with Olmeca Altos Tequila, Malbec, pear, and lemon juice.
For those with a thirst for something wicked, the Chilling Praline Parfait, (£9.75) with a frozen hazelnut coffin decorated with dark chocolate soil, raspberry sauce and confectionary treats makes the perfect partner in crime this Halloween.

Pulteney Bridge from the Empire
This week’s archive photograph was taken around 1905 from an upper floor of the Empire Hotel, looking out over Pulteney Bridge. Changes to the bridge – restoration of the Venetian window in the centre and removal of the hanging extension on the right – may have been minor, but the river bank in the distance has seen a major transformation. The nearest of the massive buildings lining it was JD Taylor’s seven-storey malthouse. Next to it, beyond a narrow entrance leading to the slaughterhouses in Parson’s Yard, was James Phillis’s coach-building works, where the bodies for Bath’s horse-drawn trams had been produced. Beyond that was the Tram Shed, only recently built when this photograph was taken. It was the depot for the electric trams which had taken over from the horse-drawn trams in 1903, but which were themselves withdrawn in 1939. Unlike the malthouse and the coachworks. The Tram Shed is still there today, although shorn of its tall chimney, with a furniture store where the trams once laid up, and flats above.

Worboys to make Premiership debut for Bath Rugby
Homegrown fly-half George Worboys will earn his Gallagher Premiership debut when Bath Rugby play Northampton Saints on Saturday.
The 21-year-old has featured six times for the Blue, Black and White to date, all in the Premiership Rugby Cup, and takes the 10 jersey in the absence of injured duo Orlando Bailey and Piers Francis.
Worboys is one of three changes to the starting XV that began last weekend’s match against Saracens.
Tighthead prop Aranos Coetzee comes back in for the injured Will Stuart while Will Butt takes his place on the wing.
The team is otherwise unchanged with scorers last time out Matt Gallagher and Joe Cokanasgia joining Butt in the back three and Cameron Redpath continuing his midfield partnership with Ollie Lawrence.
Louis Schreuder is at scrum-half behind a pack including captain Tom Dunn and Juan Schoeman in the front row.
Dave Attwood and Quinn Roux retain their places in the second row and back row of Josh Bayliss, Miles Reid and Richard de Carpentier is consistent.
On the bench, Ted Hill could make his Bath Rugby debut alongside fellow ex-Worcester Warriors man Billy Searle who has signed on a short-term deal.
Home Premiership debuts could be forthcoming for Fergus Lee-Warner and Tom Carr-Smith.
